Sabazushi (Kyoto region)
One of my recommended sushi
is "Sabazushi". "Saba", a mackerel,
pickled with salt used to be popular
especially at festivals in Kyoto.
"Sabazushi" is made in Kyoto.
Sakezushi (Kagoshima region)
May steamed prawns are laid on
sushi rice, rice mixed with vinegar,
and it is quite tasty.
"Sakezushi" is originated by the fact
that a "shogun" tried to mix leftovers
at a feast with Japanese "sake" and
it was very delicious.
Sakezushi is famous at Kagoshima.
