"Udon" is soft and thick noodles made from wheat dough.
It had many kinds of "udon". Udon which is served in a hot
soy sauce based broth with accompaniments of "abura-age"
is called "kitsune udon"
Udon which are arranged in a bowl after rinsed in water is
"hiyashi udon". It is served with cold dipping sauce made
from soy sauce, kelp, dried bonito flakes.
There are many kinds of "udon" and udon is more popular
than "soba" in the Kansai region (around Oosaka and Kyoto).
When you eat "hiyashi udon", first put "wasabi" (green
Japanese horseradish) and "kizami negi" (fine chopped
Japanese leek) into the dipping sauce. Hold udon with
chopstick and dip it into the dipping sauce. It is not rude
to make noise when eating "udon".
